Bonito
Bonito is rich in vitamins B1, B2 and D. Both bonito and dried bonito are also rich in methionine, an amino acid found in relatively low quantities in tofu, so the bonito/tofu partnership is also excellent from a nutritional perspective.
Preparation
1.
Shave bonito sashimi into slices 5mm thick.

Cut cotton (momen) tofu into slices 8mm thick.
3.
Place the bonito 1 and the tofu 2 into two separate deep trays and add half of the marinade mixture made from the ingredients in gAh to each tray. Place trays in a refrigerator to chill for 15-20 minutes, turning over at regular intervals to allow the marinade to soak in.
4.
Cut the tofu slices 3 in half, arrange on a dish with the bonito slices and garnish with a little chopped honewort.
